Organic Chestnut Honey

Chestnut honey tends to remain liquid, due to the strong fructose component. Any crystallisation is very slow, not always regular. The colour is dark amber, with reddish-greenish tones in liquid honey; when crystallised, it takes on a brown colour.

Both the smell and the aroma are intense, it is not very sweet, bitter, very persistent. Today it is one of the most widely used honeys in cooking and in combination with cheeses, especially mature cheeses (pecorino, goat), but also with ricotta.
